Instant Pot Chicken, Tomatoes and Quinoa
Ingredients
- 1.5 Boneless Skinless Chicken Thighs
- 1 Cup Uncooked Quinoa, Rinsed
- 2 Gloves Minced Garlic
- 2 14.5 oz Can Diced Tomatoes with Basil, Garlic and Oregano
- 1/4 Cup Balsamic Vinegar
- 2 Cups Fresh Spinach
Directions
- Add quinoa and garlic to Instant Pot
- Add one can of diced tomatoes with juices and one can of tomatoes, drained
- Stir in pinch of salt and balsamic vinegar
- Nestle chicken thighs into liquid
- Lock lid and cook on high pressure for 6 minutes
- Once cycle is complete, do a quick release
- Gently remove chicken
- Stir in spinach until wilded
- Serve quinoa and chicken with Parmesan cheese if desired
