Instant Pot Chicken, Tomatoes and Quinoa

Ingredients

  • 1.5 Boneless Skinless Chicken Thighs
  • 1 Cup Uncooked Quinoa, Rinsed
  • 2 Gloves Minced Garlic
  • 2 14.5 oz Can Diced Tomatoes with Basil, Garlic and Oregano
  • 1/4 Cup Balsamic Vinegar
  • 2 Cups Fresh Spinach

Directions

  1. Add quinoa and garlic to Instant Pot
  2. Add one can of diced tomatoes with juices and one can of tomatoes, drained
  3. Stir in pinch of salt and balsamic vinegar 
  4. Nestle chicken thighs into liquid
  5. Lock lid and cook on high pressure for 6 minutes
  6. Once cycle is complete, do a quick release
  7. Gently remove chicken 
  8. Stir in spinach until wilded
  9. Serve quinoa and chicken with Parmesan cheese if desired
