Baked Avocado And Eggs

Ingredients

  • 1 Large Avocado
  • 2 Eggs
  • 1 Tbsp Shredded Mozzarella
  • Dash of Paprika

Directions

  1. Pre-heat oven to 400º and spray baking dish with non-stick cooking spray.
  2. Cut avocado in half and remove pit. Flip avocado and cut a little of the rounded part of it off so that it has a flat part to sit on inside the baking dish.  This will help keep your avocado from rolling around and spilling the egg out.
  3. Crack an egg open in the crevice left behind by the pit in each half of the avocado. It's okay if the egg white spills out a little, but make sure that the yolk stays in the crevice.
  4. Sprinkle with shredded mozzarella and bake for 12 minutes.
  5. Take dish out of oven.  Let cool and sprinkle with a dash of paprika.
