Ingredients
- 1 Large Avocado
- 2 Eggs
- 1 Tbsp Shredded Mozzarella
- Dash of Paprika
Directions
- Pre-heat oven to 400º and spray baking dish with non-stick cooking spray.
- Cut avocado in half and remove pit. Flip avocado and cut a little of the rounded part of it off so that it has a flat part to sit on inside the baking dish. This will help keep your avocado from rolling around and spilling the egg out.
- Crack an egg open in the crevice left behind by the pit in each half of the avocado. It's okay if the egg white spills out a little, but make sure that the yolk stays in the crevice.
- Sprinkle with shredded mozzarella and bake for 12 minutes.
- Take dish out of oven. Let cool and sprinkle with a dash of paprika.
