Zucchini Chicken Parmesan

Ingredients
- 1 Zucchini
- 4 oz Ground Chicken Breast
- 2 oz Chopped Tomato
- 1 tsp Italian Seasoning
- Pink Salt to taste
- Black Pepper to taste
- 2 Tbsp Sugar Free, Oil Free Tomato Sauce
- 1/4 cup Shredded Low Moisture, Part Skim Mozzarella Cheese
Directions
- Pre-heat oven to 350º
- Cut zucchini in half and scoop out center.
- Brown chicken, tomato and seasonings like taco meat
- Stir in tomato sauce once chicken is cooked
- Fill zucchini halves with chicken mixture and cook for 15 minutes
- Remove from oven and sprinkle with cheese. Cook 3 more minutes.
