Zucchini Chicken Parmesan

Ingredients

  • 1 Zucchini
  • 4 oz Ground Chicken Breast
  • 2 oz Chopped Tomato
  • 1 tsp Italian Seasoning
  • Pink Salt to taste
  • Black Pepper to taste
  • 2 Tbsp Sugar Free, Oil Free Tomato Sauce
  • 1/4 cup Shredded Low Moisture, Part Skim Mozzarella Cheese

Directions

  1. Pre-heat oven to 350º
  2. Cut zucchini in half and scoop out center.
  3. Brown chicken, tomato and seasonings like taco meat
  4. Stir in tomato sauce once chicken is cooked
  5. Fill zucchini halves with chicken mixture and cook for 15 minutes
  6. Remove from oven and sprinkle with cheese.  Cook 3 more minutes.
