Ingredients

  • 2 Large Eggs
  • 2 oz Chopped Tomato
  • 1 oz Chopped Mushrooms
  • 1/3 Cup Shredded Mozzarella Cheese
  • Dried Basil (Optimal)

Directions

  1. Spray small frying pan with olive oil cooking spray.  Saute tomatoes and mushrooms until soft.
  2. Break eggs and scramble in small bowl.  Pour over cooked veggies and stir until they're no longer runny.
  3. Add shredded mozzarella and stir until melted.

Additional Notes

There's about a zillion types of egg scrambles you can make.  You just have to adjust the calorie count for your ingredients.  The basic ingredients (2 eggs and the 1/3 cup of cheese) account for 220 calories.  That gives you a base line if you don't like tomatoes or mushrooms!
