Tomato and Mushroom Egg Scramble

Ingredients
- 2 Large Eggs
- 2 oz Chopped Tomato
- 1 oz Chopped Mushrooms
- 1/3 Cup Shredded Mozzarella Cheese
- Dried Basil (Optimal)
Directions
- Spray small frying pan with olive oil cooking spray. Saute tomatoes and mushrooms until soft.
- Break eggs and scramble in small bowl. Pour over cooked veggies and stir until they're no longer runny.
- Add shredded mozzarella and stir until melted.
Additional Notes
There's about a zillion types of egg scrambles you can make. You just have to adjust the calorie count for your ingredients. The basic ingredients (2 eggs and the 1/3 cup of cheese) account for 220 calories. That gives you a base line if you don't like tomatoes or mushrooms!
