Banana Pancakes

Ingredients

  • 1 Tbsp Coconut Oil
  • 1 Banana
  • 2 Eggs
  • 1 tsp Pure Vanilla Extract
  • Dash Of Cinnamon

Directions

  1. Melt coconut oil in pan over medium heat.
  2. Smash banana with a fork until it's almost liquid.
  3. Whisk in eggs, vanilla cinnamon.
  4. Once skillet is hot, pour about 1/8 cup of batter into pan for each pancake.
  5. Wait until bubbles form and flip them.
  6. Cook until golden brown on both sides.

Additional Notes

Be patient with these and don't bump the heat up above medium.  Really wait until you see bubbles in the middle of the pancake to flip it.  When I got impatient my first go at these and turned the heat up, I got a not so pancake looking mess.  They were still really yummy, but I got an F on presentation!
